Mac Nut Pesto
 
Ingredients
  • 4 ounces local, organic fresh basil
  • Optional: 1 ounce arugula (helps prevent darkening)
  • 1/2 cup raw nuts (mac, pine, walnuts)
  • 1/2 cup extra virgin olive oil
  • 3/4 teaspoon sea salt
  • 2 cloves garlic
  • Optional: 1/2 cup Pecorino Romano cheese, grated
Instructions
  1. Using a food processor with the S-blade, process the garlic cloves until finely minced.
  2. Then add the nuts and pulse them until finely chopped.
  3. Add all of the remaining ingredients. You can leave the stems on the basil, although you may want to remove the really thick ones if they are hard.
  4. Process until your desired consistency is reached.
  5. Adjust the oil amount to make as thin or thick as you like and taste for saltiness.
Notes
Romano cheese can be salty so you may want to use less salt if adding the cheese.
